Afghani mutton biryani originates from Afghanistan and it is liked among all Pakistani areas and Indians also. Ingredients

  1. mutton: 1kg
  2. basmati rice: 1kg (soaked)
  3. Cloves: 6-7
  4. Salt: 2tsp
  5. Cinnamon stick: 2inch
  6. Ginger garlic paste: 1tbsp
  7. Onion: 1 large sliced
  8. Cumin seeds: 1tsp
  9. Raisins: ½ cup
  10. Cooking oil: ½ cup
  11. Green cardamoms: 3
  12. Sugar: 1tbsp
  13. Carrots: 4 (peeled and cut into match stick sized strips)
  14. Pine nuts: ½ cup
  15. Black pepper powder: 1tsp
  16. Black cardamom pods: 3
  17. Bay leaf: 1 medium
  18. Coriander powder: 1tsp

Steps

  1. First of all, wash the meat well and add salt, cinnamon, cloves, 8 cups of water, ginger garlic paste, and other spices to it. Put on the stove and bring to a boil.
  2. Cook covered on low flame until meat is tender well.
  3. Meanwhile, fry nuts, carrots, and raisins in a tbsp of oil for 5 minutes adding 1 tbsp sugar as well.
  4. Now add rice to the boiling meat and make sure there are 6 cups of water remaining for rice.
  5. Cook rice stirring carefully until water dries, just rich moisture is there in the rice. Do not stir hardly otherwise rice will break.
  6. Put a layer of fried raisins, carrots, and nuts on top of the rice, turn the flame to very low and cover the skillet well.
  7. Simmer on this flame for 8 to 10 minutes more and then dish out for serving.
  8. Serve hot and delicious afghani mutton biryani with salad.
