On Eid-ul-Adha it is a famous Muslim tradition that they use to do breakfast on Eid’s first day with the Mutton Liver fry. So, they do fast until the animal has been slaughtered, then they cook its liver and do breakfast. It is actually Sunnah by the holy prophet Muhammad (S.A.W.W), and Muslims do this action in remembrance of the Holy Prophet Peace Be Upon Him. Mutton liver fry is really a very delicious and nutritious recipe that contains all healthy ingredients.

You can make it on Eid’s 1st day and serve it for breakfast, it will bring real pleasure to your food. We are going to make it with all the required spices and vegetables, tomatoes are used more in this recipe to make it sour and full of masala. Kaleji fry can be served at routine life events like any gatherings and other family events.

Ingredients

1. Goat/lamb liver: ½ kg

2. Onion: 1 medium (thinly sliced)

3. Ginger garlic paste: 1 tbsp

4. Tomatoes: 3 (chopped)

5. Green chilies: 3-4

6. Coriander leaves: chopped for garnishing

7. Salt: as required

8. Red chili powder: 1tsp

9. Turmeric powder: ½ tsp

10. Hot spices powder: 1 tsp

11. Kaleji masala powder: 1tsp

12. Coriander powder: 1 tsp

13. Cumin powder: ½ tsp

Steps

1. First of all, we need to clean the liver very finely and remove its bad smell, take some water in a bowl. Then add 2 tbsp. of vinegar, 1 tbsp. of salt and ½ tsp of garlic paste to it. Mix well everything and put the liver in it, and keep it in the refrigerator for 20 to 30 minutes.

2. Now take out the liver and wash very well, now all blood will drain from it and the smell will also be removed. Start with cooking now!

3. Turn on the stove, Fry onion in ½ cup oil then add ginger garlic paste to it and sauté for a while.

4. Add tomatoes and a little amount of water, and cook covered on medium-low heat for 5 minutes.

5. Now when tomatoes are tender good fry a while, mash tomatoes on this step to bring a smooth texture.

6. Now add small pieces of liver and fry on high heat for 2 3 minutes. Add all of the spices mentioned above along with salt.

7. Add 1 cup of water and cook covered on medium heat for 10 minutes.

8. Now check if the liver is tender and juicy, if it is not done then cover for more time.

9. Fry the liver masala until the water evaporated completely and oil separates. Fry for more than 8 to 10 minutes.

10. Garnish with coriander leaves and green chilies. Serve hot with chapati and enjoy!
