Mutton Nalli Nihari Recipe

Mutton Nalli nihari is the most famous traditional food among Pakistani and Indian people. its main ingredients include mutton, marrowbones, fried onion, flour, spices, and ginger-garlic. Nihari is usually cooked slowly on medium flame in order to make the meat soft and spongy. Big chunks of meat make real and flavorful nihari and bring real pleasure to your meal. The word nihari is actually an Arabic word that means “morning”. It was very like among nawabs in the Mughal Empire. But now it is one of the best continental foods of India, where people serve it in Morning breakfast. It is famous in Lahore Pakistan also, people from Lahore consider their breakfast incomplete without nihari or Paya curry.

  1. Mutton: 1kg (big chunks and fat-containing bones)
  2. Marrowbones: ½ kg
  3. Flour: ¼ cup (mix with some water and make sure that it is a smooth paste)
  4. Cinnamon stick: 1inch
  5. Cardamom pods: 2
  6. Hot spices powder: 1tsp
  7. Cumin powder: 1 tsp
  8. Coriander powder: 1tsp
  9. Chili powder: 1tsp
  10. Yogurt: ½ cup
  11. Nutmeg: a pinch
  12. Turmeric powder: ¼ tsp
  13. Bay leaves: 2-3
  14. Cloves: 3-4
  15. Ginger garlic paste:  1tbsp
  16. Oil/ghee: ½ cup
  17. Fennel seeds: 1tbsp
  18. Green chilies: 2-3 (for garnishing)
  19. Lemon: 2-3(for garnishing)
  20. Coriander leaves and ginger strips: for garnishing
  21. Brown onion: as required

  1. Wash the meat and the bones well and remain aside to dry.
  2. Combine all the spices add salt as required also, heat ¼ cup of oil in a skillet, and add all spices to it.
  3. Add Mutton along with bones and fry for 10 minutes. A nice aroma comes out and Mutton turns light brown.
  4. Add 6 cups of water, bring to a boil and cook on low flame for 3 to 4 hours. Stir occasionally.
