Shinwari mutton karahi is one of the most special food recipes in Pakistan. It originates from northern Pakistan and Afghanistan. Actually, a tribe of people in Afghanistan and Pakistan is called Shinwari. This dish is introduced by that tribe so its name is Shinwari mutton karahi. Shinwari karahi can be made of Beef and chicken also but here we are sharing the mutton recipes. The specialty of Shinwari karahi is that it is made of only a few ingredients. only its way of cooking and preparation makes it different from other foods. Tomatoes and black pepper bring an amazing joyful taste to it and the way of cooking makes it aromatic.

1. Mutton: 1kg (medium pieces)

2. Ginger garlic paste: 1tbsp

3. Salt: as required

4. Black pepper powder: 1tsp

5. Oil: ½ cup

6. Green chilies: 3-4

7. Tomatoes: 4-5 (divide into two pieces each, by cutting from the center)

8. Hot spices powder: ½ tsp

9. Coriander leaves: chopped (for garnishing)

1. Heat oil in a skillet and fry mutton in it for 8-10 minutes or until it turns pretty brown in color.

2. Add ginger garlic paste and salt and fry for one minute on medium heat.

3. This is the key step of this recipe… yes here we are going to make it real Shinwari karahi. Arrange tomatoes on top of the meat. it will bring a nice red color to the karahi.

4. Add 2 cups water and cook covered for 30 minutes on medium heat.

5. Now remove the peels of tomatoes with a spoon or fork.

6. Fry well on high flame and add hot spices powder and black pepper powder.

7. While frying crushes the tenderized tomatoes to paste and keep on frying well. 8. In the end, add green chilies and fry for a while. Garnish with coriander leaves and serve with chapati or rice along with raita.
