Tehari (Potato Rice(Pulao))

Taheri (Pulao) is one of the most famous rice recipes among Pakistanis and Indian people. Let’s have a look in the history of this recipe. Actually, it is one of the special foods of old people, they used to make it on special occasions like for gatherings and events. It was named tahari (in Urdu and Hindi languages occasions are called tehari (Pulao), so they used to call it tehari (Pulao), as time passed, it’s now being pronounced Taheri) means a special food for occasions.

Ingredients.

  1. Basmati Rice: 2 cups (soaked at least for one hour)
  2. Potato cubes: 1 small cup (medium in size)
  3. Tomato: 2 mediums (chopped)
  4. Onion: 1 medium (thinly sliced)
  5. Cooking oil: ¼ cup
  6. Ginger garlic paste: 1 tsp
  7. Green chili paste: 1 tsp
  8. Turmeric powder: ¼ tsp
  9. Salt: according to taste
  10. Red chili powder: ¼ tsp
  11. Cardamom pod: 1
  12. Cloves: 3,4
  13. Black peppercorns: 5,6
  14. Cumin: ½ tsp(crushed)
  15. Coriander seeds: ½ tsp(crushed)
  16. Coriander leaves: ½ cup(chopped)

Steps

  1. Add oil and heat for a minute, then add onion and turn them brown in color.
  2. Now add ginger garlic paste and fry until a nice aroma comes.
  3. Add tomatoes and fry until they are tender.
  4. Now it turns to add the main ingredient which is potatoes. Add them and fry for a while, add little water and cook covered on medium-low flame for 5 minutes, potatoes should be half or more done.
  5. After that add all spices, salt, and chili paste, and fry for 5 minutes on medium-high flame. Add 4 cups of water and bring it to a boil.
  6. Now add finely washed and soaked rice to it and cook until the water evaporates. When the rice seems like dry, means just moist is remaining in the rice then cover with a lid and turn the flame to very low and simmer for 10 minutes.
  7. Check if the rice is done then dish out, garnish with coriander, and enjoy this nice aromatic and yummy Taheri with raita and salad as well.
